  • Butter. You can unsalted butter to control the amount of salt you use but salted butter works too.
  • Onion. I prefer that taste of a white onion but you can use yellow or even red with this soup if you prefer.
  • Celery. This creates that foundational "soup" flavor to which you'll add other cheeseburger flavors.
  • Ground beef. It's best to go lean but if you can't that's OK. We will drain the beef and eliminate any excess grease that way.
  • Hamburger seasoning. We use this Gourmet Burger Seasoning by Weber. It has everything you need for giving your beef amazing flavor. McCormick Grill Mates Hamburger Seasoning is a great option as well.
  • Bacon. Fresh cooked bacon is going to be best. Cook it extra crispy. In a pinch, you can use real bacon bits. However, I find they don't have as much flavor.
  • Potatoes. Large russet potatoes are best. They have a nice texture and hold up well when cooked in broth. However, other types of potatoes work well too.
  • Beef broth. This adds a layer a flavor to the creamy, cheesy broth.
  • Cheddar cheese. Freshly shredded is best because it melts better but you can get away with using pre-shredded if you're short on time. Be sure to save some extra for garnish.
  • Cream cheese. Just a simple block of cream cheese is all you need. You can use whipped cream cheese if you don't want to stir as much to get it to combine with the soup broth.
  • Green onions. These are optional as garnish but really add a lovely crunch and freshness so I recommend not skipping these!
  • Pickles: Also, optional, but if you are a pickle-lover, you can go ahead and place a few sandwich pickles or a squeeze of relish on top. Sweet or dill — your choice!

Ingredients

  • 1 tablespoon butter
  • ½ white onion chopped
  • ¼ cup chopped celery (1 stalk)
  • 1 lbs lean ground beef
  • 1 tablespoon gourmet hamburger seasoning
  • 2 slices bacon, cooked and chopped (optional)
  • 2 cups diced potatoes (24oz or 2 large potatoes)
  • 4 cups beef broth
  • 3 cups shredded cheddar plus extra for garnish
  • 4 oz cream cheese, cubed

Garnish

  • sliced green onions to taste
  • salt and pepper to taste

Instructions

  • Melt butter in a large pot (8 quarts) over medium-high heat.

    Add onion and celery and cook for 4 minutes or until the tender and the onions are translucent.

    Mix in the ground beef, and cook until brown. Drain the beef.

  • Pour beef, onion, and celery mixture back into the pot.

    Stir in hamburger seasoning and cooked bacon.

    Mix in the diced potatoes and pour beef broth into the pot.

    Bring to a boiling, then reduce heat and simmer for 30 minutes or until the potatoes are very tender.

  • Mix in cream cheese until it is melted, then gradually stir in the cheddar cheese until it is melted and completely mixed in then remove from heat.

    Serve soup hot topped with additional cheddar cheese and green onion, if desired, on top.

Notes

To drain beef, use a colander placed over a bowl to catch the drippings. Let drippings cool then scrape into the trash so they do not go down your sink drain.

Cook beef until browned for added flavor. Vegetables should not brown unless you prefer a more smokey, charred flavor.
