If an oatmeal cranberry cookie is your sweet treat of choice you must try my breakfast version! This cookie granola tastes just like your favorite dessert turned into a breakfast cereal!
This oatmeal cranberry cookie granola is inspired by the amazing oatmeal cranberry cookies one of my best friends, Marisa, makes. She also makes an excellent mojito but I'll need to save that for another post.
Anytime she offers to bring a dessert to a party I cross my fingers and hope it's oatmeal cranberry cookies. And then part of me is glad when it's not so I won't be tempted to eat them all!
I'll tell you a little secret as a reward for reading this far. This recipe came about when I made oatmeal cranberry cookies and they fell apart. I liked them just as much as a cookie granola cereal! I tweaked the recipe a bit more and I now enjoy these as cereal, on yogurt, or plain as a snack.
This keeps really well in the fridge. Almost indefinitely. I found some in the back of the fridge about 6 months after making this and it was fine! It still tasted great. You can easily double or triple this recipe to make a big batch.

To make my cookie granolayou can make cookie shapes before baking but you really don't have to. You can just spread the mixture on the cookie sheet.
It can be hard to find unsweetened dried cranberries but they are sold on Amazon or you can make your own with my sugar-free dried cranberries recipe. I also know someone who just washes regular sweetened dried cranberries to remove some of the sugar. I'm not sure how effective that is but if a little sugar is ok in your diet it might be a good option.

Ingredients
- 3 cups gluten-free oats
- 3 egg whites
- ¼ cup Joy Filled Eats Sweetener (or see alternativesin recipe notes)
- 1 tablespoon butter flavored coconut oil melted
- 1 teaspoon molasses
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ⅔ cup sugar-free dried cranberries
Instructions
Preheat oven to 350.
Mix together all the ingredients (except the cranberries). Spread on a large cookie sheet. Bake for 10 minutes.
Mix in the cranberries. Bake an additional 10-15 minutes or until golden brown.
Notes
Notes on Sweeteners:
I use my ownblend of xylitol, erythritol, and steviain my recipes. This is twice as sweet as sugar. It is comparable toTrim Healthy Mama Gentle SweetandTruvia.
To sub inSwerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for.
To sub inPyureorTrim Healthy Mama Super Sweetuse half the amount of sweetener called for.
Substitutions will work in most recipes. They may not work in candies, such as caramel.

Can raisins be substituted for the craisins and still be a THM E?

That is a great question. THM does not really recommend dried fruit but their recipe for Sweat Pants Oatmeal does have 10-12 raisins in 1 serving. So I do think you can sub raisins in this.

Thank you for doing the sweetener conversions for us. I bake with different sweeteners depending on the recipe, or what I have on hand at the time. I do have a conversions chart, but this sure makes things easy.

I based these on an oatmeal cookie recipe. You could probably omit it if you prefer.
